Good Evening! It’s a late one, but it’s still Monday. We are experiencing a nice little winter storm at the moment. Looking to get about 3-5 inches of snow tonight. Then more later on in the week. We really haven’t had much snow, so I am enjoying it.

THE WEATHER OUTSIDE IS:
RECIPE I HAVE TRIED:
So I saw a recipe for Chicken Cordon Bleu. It looked super delicious, but rather involved. The video I saw of it, didn’t have the recipe written out, so I did a Google search to see if I could find it, and Google suggested a Chicken Cordon Bleu Casserole! Yes please!! I checked it out, and used the sauce recipe from the first one I saw, and this is what I came up with. Super easy, very flavorful!!
Chicken Cordon Bleu Casserole
Cook 3 lbs Chicken in Crock Pot 3 to 4 hours
Season with:
1 t salt
1 t pepper
1 t Garlic Powder
1 t Onion Powder
Shred and layer at bottom of 9 x 13 Casserole dish
Dice ¼ lb. of ham (from the deli) and layer over chicken.
Sprinkle 1 ½ cups shredded Swiss Cheese over Ham
Prepare the Sauce:
3 T Butter
2 Garlic Gloves
3 T Flour
2 c milk
¼ c Dijon Mustard
1 c shredded Parmesan Cheese
Salt
Pepper
Melt butter, add flour until creamy. Add milk until combined. Add Dijon mustard, salt, pepper and parmesan cheese. Stir until thick and creamy.
Pour sauce over the cheese layer
Topping:
1 ½ c Panko bread Crumbs
4 T Butter – melted
½ t Season Salt
Mix bread crumbs and season salt, add melted butter and mix together. Sprinkle topping over the top of the sauce.
Bake at 350 for 30 minutes. Serve with your favorite side dishes

Always fun to watch. My son shares these with me. These are real shots, not a trick of the camera. I read an article from a couple of years ago, that two of the 5 guys do this as a full time job. Maybe by now they all do, but I enjoy watching them, and you can’t help but get excited when they land these crazy tricks.
WHAT’S HAPPENING:
Over the weekend my middle son Elijah turned 17! He just loved the cake that my nephew had at his wedding, so I ordered his cake from the lady who made theirs. It was delicious. As they are getting older, it’s getting harder to coordinate everyone’s schedule to celebrate. But he was able to have fun at the Youth Night at church.
Not much else going on. I’ll be working on filing taxes for everyone, but that is actually something I enjoy doing and I’ll be doing some painting in the bathroom this weekend.

Send us some snow! It keeps missing us. I just want one decent snow storm. That recipe sounds wonderful, I’ll have to file it away for hunting season (my husband won’t eat Swiss cheese). Hope your son had a great birthday! And hope you are having a wonderful week so far!
