Good Morning!!  What an uneventful winter we have been having here.  Very little snow, which is so disappointing to me.  We did have sun over the weekend which is actually nice, since we’ve had long stretches of gloomy days.  Thursday, my son Elijah turned 16 years old.  He’s my middle kid, and has grown as tall as his older brother.  We just celebrated with food and cake with the family, which is getting harder to do as everyone’s schedules are different, we actually did this on Wednesday because of just that.  Each year that goes by I cherish these times with all my kids still in one place, I know it won’t be like this forever.  Here’s to another week!!

RECIPE I WANT TO TRY/HAVE TRIED:

Recently I made a recipe that my mom used to make all the time, which she got from her mom.  My mom used to make it using her pressure cooker, but I did it in the crock pot, and it turned out sooo good.  I don’t know how authentic it is, but hey, we’re polish.  Plus, I researched it, and found out its not Chinese after all, it’s actually an American dish, so we’re good.

Chop Suey

2 lb. Chop Suey Meat

2 cups Celery (diced)

2 cups Carrots (diced)

1 cup Onions (diced)

4 T Bead Molasses

4 T Soy Sauce

4 cups water

Salt and Pepper

Salt and pepper meat, brown with onions in fry pan.  Mix Water, Molasses, and Soy sauce in crock pot.  Add browned meat, celery, and carrots.  Cook on high for 4 hours.  Serve over rice.

This is one I’d like to try next:  Apple Pie Tacos…looks yummy.

Good Afternoon!! Actually had a really nice weekend, with a little R&R.  The weather on Saturday was gorgeous.  Sunny and 60!!  Being that my doctor recently prescribed Vitamin D for me, and I need to lower my cholesterol as well, I took advantage of the beautiful day, and took a walk through our park with the boys.  Strapped on my pedometer and logged over 4000 steps, which is a little over a mile and a half.  This may not be a big deal for some, but for me, it was, I don’t walk anywhere.  As I was getting ready, I overheard Ben telling Elijah how nice it was outside, and that we were getting ready to go for a walk, he says, “It’s really nice outside.  It’s so nice, that even mom is going for a walk, she doesn’t walk anywhere!!”  Yeah…it’s like that.  See my pics below in FAVORITE PIC FROM THE CAMERA.  Enjoy the week, we are getting back to some cooler temps.

My mom had found this recipe for No Bake Chocolate Oat Bars.  So I tried those this weekend.  They turned out pretty good.  The recipe calls for an 8 x 8 pan.  I wanted to make a bigger pan, I only increased the recipe by half, next time I’ll double it.

Good Morning!!  We had a great first week of school, and already a three-day weekend!!  I’ve been a little under-the-weather all weekend, but the bonus to that is I have been relaxing and reading!! See below for what I’ve been enjoying.  We’ve had a pretty snow-less winter so far; winter is broken.  It was nice that we had snow for Christmas, but nothing since then.  This past week we were hit with freezing rain, and that was not fun.  Would love at least one good snow storm this year.  Hope everyone had a great weekend, and here’s to another week ahead!!

RECIPE I WANT TO TRY/HAVE TRIED:chicknalfredo

So, I did try the Chicken Bacon Alfredo Bread Boat.  It turned out really good, and I received several thumbs up.  The one thing I did differently is I didn’t buy one big French loaf of bread.  I saw it on the shelf at the store, but I’m sorry, I just could not bring myself to buy something that sits on a shelf, wrapped only in a paper wrapper, that has the end of the bread sticking out.  So, I bought these little individual rolls, called Bambino Rolls and made several little ones.

This is the next thing I want to try, Slow Cooker Shredded Steak Tacos.

My niece had made these, and my sister said they were delicious.  They look yummy.

 

WHAT I’M READING: 

This is a “Christmas story,” it takes place around Christmas.  My mom had read it, and she told me about it, so I started reading it over the weekend.  You can’t go wrong with Richard Paul Evans.  He writes a Christmas story every year, and I have enjoyed them all.  The Mistletoe Secret is about a divorced blogger who writes about how lonely she is.  A recently divorced man finds her blog, and relates to her loneliness, and forms an attraction to her through her words.  She has no identifying information on her blog, except her initials and she mentions a few clues that sends him to her little town to find her.  As always great writing, and great characters.  Loved this…

I stayed up last night and finished it, a very good read!!

Good Morning!! We are back at school today.  The break was nice. As the break was winding down, I was having a kinda gloomy day.  But that was the day I received an awesome surprise in the mail.  I had been talking with my BFF over the holidays, catching up and then reminiscing in light of the news of George Michael’s passing.  Her sister took her and I to see Wham! in concert.  We grew up together, at first living right across the street from each other.  She did mention to me to watch the mail, I had no idea what she was going to send me.  But when it came, I could not believe it!!  Totally made my day!!  See the pic below in FAVORITE PIC FROM THE CAMERA

HAPPENINGS AROUND TOWN: 

I was able to attend the Adult Coloring Café, and it was really nice.  There was a Keurig coffee maker setup with assorted cups for us to make something warm to drink.  We are also able to bring our own snacks if we want.  Music was playing quietly, and I tell you what, it could have been my Pandora station playing, a lot of my favorite songs came on.  There were single pictures to color that were printed on nice heavier stock paper.  The tables had colored pencils and markers to work with.  I chose a Mandela design, and was able to complete it.

I started another one that I will take back with me next month to finish.  I sat with two ladies who came together, and we chatted some, colored, and enjoyed the music; a very relaxing, friendly atmosphere.

Happy New Year!! This is late, but it’s still Monday 😀  I spent the day putting away the decorations and cleaning the house.  Everything looks so bare once the decorations are gone.  My break that I anticipated is quickly coming to a close. Looking forward to joining the Adult Coloring Club at the library on Thursday, and hopefully getting a day all to myself where I do absolutely nothing.  Hope everyone had the happiest of holidays, here’s to a new year!!

Can’t believe that last week I did a tribute for George Michael, and a week later we were witnessing the death of Carrie Fisher and her mom, Debbie Reynolds (who my sister was actually named after).  When talking to my kids about it, I had to tell them that Princess Leia died, since that is the only way they know her.  Being the Star Wars fans that they are, they were pretty sad about it.  The twins had actually seen the new movie the night before and were talking about how good it was.  I guess it’s a sign of getting older, as our favorite actors and/or musicians from our youth start passing away.

iHeart Radio’s dedicating one last dance to those we lost in 2016.
