Good Evening!!  Trying to get back into the swing of things.  After not having any snow for the months of January and February, we just now got a couple of inches this morning. Nothing to write home about really, maybe 2” but they are talking some lake effect snow for us tonight. We finished the standardized testing for the boys last week, now we are concentrating on getting the extra projects done so that we can enjoy our spring break at the end of the month.  We are also trying to adjust to the time change from over the weekend, where we had to “spring forward.”  Hope everyone has a wonderful week!!

WHAT I’M READING:

I just finished reading the book I was Beta reading, need to get my thoughts together on it.  It was an enjoyable read, had me literally laughing out loud.  I’ll post my review of it next week.

I haven’t been using my kindle as much, as I have downloaded the app on my phone.  But I did use it to do this beta read, so that I could highlight and add notes as I went along.  As I was looking through my library, I noticed I actually have a couple of books that I have started, but never finished.  I’ll have to get to those soon.

 

RECIPE I’VE TRIED:

A few weeks ago, I actually did try the Slow Cooker Shredded Steak Tacos, and they were really good, they have a really good flavor, and so easy to make!!  A nice change from the tacos I usually make with hamburger meat.  Find the recipe from my previous post here.

Good Evening!!  Just now getting this together.  With the boys new virtual school they have to do standardized testing.  So today, we had to go to a college almost 30 miles from our house for the first round.  It’s today and tomorrow, and next Monday and Tuesday as well.  Something totally new for all of us, at least it was a nice sunny day for a drive (though rain in the forecast for tonight).  Wow, last week of February already.  Have an awesome week!!

WHAT I’M READING:

Being that I had some time to kill, I downloaded the new Bella Andre book, Now That I Found You.  This is part of a series that I have read from her. Her books are your typical romance, but her characters are always interesting.

What I am looking forward to is being able to beta read for the same author I did previously.  This book I have actually been waiting for, so getting a sneak peek is going to be exciting.  I’ll be posting more about it later.

Good Afternoon!!  Celebrating President’s Day with a nice 4-day weekend!!  And it was nice indeed.  I planned myself a me-time getaway, and it was absolutely wonderful!!  I didn’t go far, just stayed at one of the Hilton hotels about 30 minutes away.  It was relaxing, quiet and oh so needed.  When I checked in, the guy at the desk asks if I would be staying alone, and I was like, Oh, yes, and told him it was my me-time getaway.  He said when he worked at a hotel in Florida, a lady would check in the same time every week, and he finally asked her what it was that brought her to the hotel so frequently, and she told him it was her time away from her husband and kids, it was her Calgon moment. She would order food in and spend time in the Jacuzzi.  That must have been one happy lady, if she was able to do that on a weekly basis, lol 😀 I still have today off, then we’re back at it on Tuesday, but silently counting down to Spring Break. 😉  Hope everyone is doing well, here’s to another week!!

 FAVORITE RECIPE:

Here is another one of my favorite family recipes, I am the 4th generation to make this cake.  It’s simple yet so delicious, perfect with coffee.

Milnot Coffee Cake

3 cups flour

3 t baking powder

½ lb. butter or margarine

1 can Milnot (Evaporated Milk)

2 cups sugar

2 t Almond extract

4 eggs

Pinch of salt

Cinnamon and Sugar mixture

Blend flour, sugar, baking powder, salt and butter until crumbly.  Take out 2 good sized handfuls (about 2 cups) and set aside.  To the rest add eggs, milk and almond flavor.  Pour into greased 9 x 13 inch pan and sprinkle crumbs you set aside.  Then sprinkle top with cinnamon and sugar.  Bake at 350 for 30 minutes.

HAPPENINGS AROUND TOWN:

Our library also has an Adult Game night.  When my mom was at the book club meeting, she found out that this month the Game night was for Scrabble.  So her and I went.  We played with two other ladies, one that I knew from the Adult Coloring Café, and the other lady my mom knew, neither of them had ever played Scrabble before.  It was fun, my mom actually won at our table.  There weren’t any prizes, but it was fun to get out and play, as well as chat with friends.

Good Morning!!  What an uneventful winter we have been having here.  Very little snow, which is so disappointing to me.  We did have sun over the weekend which is actually nice, since we’ve had long stretches of gloomy days.  Thursday, my son Elijah turned 16 years old.  He’s my middle kid, and has grown as tall as his older brother.  We just celebrated with food and cake with the family, which is getting harder to do as everyone’s schedules are different, we actually did this on Wednesday because of just that.  Each year that goes by I cherish these times with all my kids still in one place, I know it won’t be like this forever.  Here’s to another week!!

RECIPE I WANT TO TRY/HAVE TRIED:

Recently I made a recipe that my mom used to make all the time, which she got from her mom.  My mom used to make it using her pressure cooker, but I did it in the crock pot, and it turned out sooo good.  I don’t know how authentic it is, but hey, we’re polish.  Plus, I researched it, and found out its not Chinese after all, it’s actually an American dish, so we’re good.

Chop Suey

2 lb. Chop Suey Meat

2 cups Celery (diced)

2 cups Carrots (diced)

1 cup Onions (diced)

4 T Bead Molasses

4 T Soy Sauce

4 cups water

Salt and Pepper

Salt and pepper meat, brown with onions in fry pan.  Mix Water, Molasses, and Soy sauce in crock pot.  Add browned meat, celery, and carrots.  Cook on high for 4 hours.  Serve over rice.

This is one I’d like to try next:  Apple Pie Tacos…looks yummy.

Good Afternoon!! Actually had a really nice weekend, with a little R&R.  The weather on Saturday was gorgeous.  Sunny and 60!!  Being that my doctor recently prescribed Vitamin D for me, and I need to lower my cholesterol as well, I took advantage of the beautiful day, and took a walk through our park with the boys.  Strapped on my pedometer and logged over 4000 steps, which is a little over a mile and a half.  This may not be a big deal for some, but for me, it was, I don’t walk anywhere.  As I was getting ready, I overheard Ben telling Elijah how nice it was outside, and that we were getting ready to go for a walk, he says, “It’s really nice outside.  It’s so nice, that even mom is going for a walk, she doesn’t walk anywhere!!”  Yeah…it’s like that.  See my pics below in FAVORITE PIC FROM THE CAMERA.  Enjoy the week, we are getting back to some cooler temps.

My mom had found this recipe for No Bake Chocolate Oat Bars.  So I tried those this weekend.  They turned out pretty good.  The recipe calls for an 8 x 8 pan.  I wanted to make a bigger pan, I only increased the recipe by half, next time I’ll double it.
